Västerbottensost is a hard mature cheese. Matured for at least 14 months, it has a deeply savoury taste with plenty of umami. The texture is both crumbly and juicy with hints of crunch.
The cheese has a characteristic flavour that is used widely in both traditional and modern Scandinavian cuisine. Try it instead of Pecorino or Parmesan on your pasta dish or in your salad for a surprising Swedish twist. Vasterbottenost is also excellent as a dessert cheese.
The Vasterbottenost Gourmet Piece - 165g is made from the centre part of the big cheese wheel - giving it a more delicate texture and flavour.
In 2016, Västerbottenost cheese was named best hard cheese in the Swedish cheese festival.
