Help! Vegan Recipes Please!

MrsChimp's parents are poorly, so I'm going to visit on Thursday. I'm making them a Welsh cawl, but their carer is a vegan, so can't have any.
I worked as a chef for a few years, but vegan wasn't a thing back then and I have no clue where to start.
Any suggestions would be appreciated.
I can get a Tesco delivery if I need anything from there.

lilyflower I've just had a look at the Cerys Matthews recipe and I can confirm that she has no clue what she's talking about. That must be the worst cawl recipe that I've ever seen!
I hope that she likes living outside Wales, because she'll be kicked out with nonsense like that

Could you maybe ask the carer what she’d like to eat or to give you some ideas?
Something simple like a jacket potato with baked beans might be ok. And vegan cheese exists but I’ve no idea if they’re edible!

TheChimp does the carer normally eat with your parents? Maybe they know what she eats?

Billion online recipes everywhere now...a d you can get ready meals or at least sausages ,burgers etc in supermarkets..if you don't know her likings sure she would appreciate anything vegan got for her specially
I had not heard of this soup. Reading about it it is veg and meat soup served with cheese ,so could you not just do a portion same recipe veg and replace the meat and stock with plant based?
