Hi Nicola,

For cheese on toast, I like to grill one side of the bread first. Then spread tomato ketchup on the untoasted side, and put the cheese on top and then grill that side. Yummy, and no butter!

Of course one really ought to use a low sugar ketchup and low fat cheese but hey, you only live once!

If you have an Aga then try sticking half a loaf of Hovis or similar in the oven until piping hot with a crispy crust, and eat the lot with butter and cheese...oh wow...like my favourite ever!

There are different kind of cheeses and u can get most of them. Curd cheese is one of the best, low in fat and u can make several different things from them. Cottage cheese also nice, can be made sweet with fruits or savory. U can eat cheese on the side with other things, like mushrooms> onion, mushrooms, garlic and pepper and salt and u can put them on a slice of bread, yumm....

Cheese and grapes are the best, they are so nice together yummmmmmmilicious...

And I am sure it can be googled how to use cheese and what can u make from them, they are good on a top of the salad too

You are lucky cheese is on your diet - I love it. I use quark - revolting stuff, but almost fat free and takes on other flavours well. I use approx 28g of strong blue cheese - like danish blue, mash it and mix into the quark and leave overnight, little bit of water to thin it slightly and you have a blue cheese dressing or a dip. For low fat cheddar - make a frittata with all your leftover veg and beaten eggs, mix in grated cheese for flavour and bake. Always grate hard cheese as you eat less because psychologically it looks more, use on jacket potatoes. Make a cheese sauce with cornflour and milk (no butter) ideal for lasagne, pour over plate of just veg, or fish or chicken. Low fat soft cheeses like Philadelphia melt down and make great sauces for pasta or as a base for fish pie etc.

Cheese on toast, YES, YES and more YES, I had it at lunchtime today. Sometimes I make a 'sort of pizza' tomato paste, sliced onion on top of that then cheese under the grill. Lovely.

If you are feeling a little adventurous, you could try a low fat cheese fondue, with healthy crudités. It's tasty and can be fun. You should be able to find some recipes online 🧀
