How do you prepare your roasted potatoes?
I like them when they are really crunchy .

Most important - choose a variety of potato suitable for roasting. Cut at angles to give bigger surface area. Par boil for 10 mins. Drain and give them a shake in the pan to fluff slightly. Sprinkle with flour, salt and pepper, give another little shake. Cook in a hot oven in rapeseed or vegetable oil turning occasionally until golden. Perfected by my father and all the family follow the recipe!
