When to Book a Holiday?

Thinking about a cheap week all inclusive, when is the best time to book to get the cheapest price?
Looking at may or June to incorporate an inset day to hopefully avoid the fine as only had 4 school days off then.

That's a tough one to answer as I find its destination/demand dependent. January is normally the month most book their holidays and it depends how far your budget is going to stretch etc..
