How Big Does a Chilli Have to Be before Its Edible

I have hot chillies in my greenhouse. Surprisingly one is growing a bit, I don't want to leave it too long as plant will die off soon. Would love to use it for my jerk gammon when best to harvest it or is it worth bringing it in on my window sill
There is no set size for a chilli (depends on the variety) . Even on the same plant I have sizes varying from 1cm to 7 or 8 Cm .
I usually wait till they turn red , but have noticed that over the last week or two they have stayed green and only the odd one has turned red .
Still very much alive and the green ones are certainly ok to eat (the heat is in the seeds ) but I think the ripening time is over for this year despite the recent mild weather .
Golfforall would it last long enough to turn red (I like the heat) if I brought it indoors or would it be a shock to plant used to being outdoors (although in greenhouse it has no heater)
Imnotcheap I brought a couple of my plants indoors a week or so ago . a couple of chillies are turning red but the rest I think will stay green (but will still be fine ) .
All chillies aren't equal some are really hot even when green !
I had an abundant amount of chilli's on the plants this year. I brought in and used or froze the red ones but had so many that were green. I waited until a few weeks ago and brought them in and almost all turned red without withering up and are now happily frozen. You can't lose anything by bringing them in as they would die if left with the cold weather that is on it's way.
tumblespots think I will bring the ones that look like a might get a chilli in maybe herbs too
